Resumo Recentemente, no Brasil, cultivares de tegumento colorido estão sendo desenvolvidas, como as de tegumentos marrom e preto. A soja com tegumento preto tem sido amplamente utilizada há décadas, devido aos seus benefícios para a saúde e ao uso na medicina popular oriental em razão da presença de fitoquímicos. Estes foram reconhecidos como ingredientes alimentares funcionais promotores da saúde, devido à sua atividade antioxidante, sendo também, conhecidos por terem efeitos anticancerígenos, hipoglicêmicos e anti-inflamatórios, e ainda têm sido usados no tratamento de vários distúrbios circulatórios. Este estudo teve como objetivo determinar a composição centesimal, os níveis de ácidos graxos e a atividade de lipoxigenase de linhagens de soja específicas para a alimentação humana, com diferentes colorações de tegumento. A linhagem MGBR10-16601, de tegumento amarelo, apresentou o teor mais elevado de proteína (37,6 g 100 g-1) e menor teor de gorduras (18,3 g 100 g-1). A linhagem MGBR10-1620, de tegumento amarelo, foi identificada como livre das isoenzimas de lipoxigenase. Os teores de ácidos graxos insaturados variaram de 18,48 a 31,37 mg g-1 para o ácido oleico e de 47,36 a 58,31 mg g-1 para o ácido linoleico. A linhagem de tegumento preto, BRN07-50543, apresentou teores de ácidos oleico (31,37 mg g-1) e linoleico (47,36 mg g-1) inferiores aos padrões definidos pelo Codex Alimentarius para o óleo de soja, e elevado teor de isoflavonas totais (546 mg 100 g-1). A cultivar BRSMG 790A, de tegumento amarelo, apresentou o menor nível de isoflavonas (171,4 mg 100 g-1). Todos os materiais genéticos avaliados estão dentro dos parâmetros de soja comercial para os níveis de proteína bruta, gorduras, fibras alimentares e cinzas.

Abstract Recently, in Brazil, coloured-tegument soybean cultivars have been developed, such as those with brown and black teguments. Soybeans with black teguments have been widely used for decades due to their health benefits and their use in oriental folk medicine as a result of the presence of phytochemicals. They have been recognized as health-promoting functional food ingredients due to their antioxidant activity, and are also known to have anti-cancer, hypoglycaemic and anti-inflammatory effects and have been used in the treatment of various circulatory disorders. This study aimed to determine the proximate composition, fatty acid levels and lipoxygenase activity of soybean lineages with different tegument colours intended for human consumption. The lineage MGBR10-16601 which has a yellow tegument, presented the highest protein and lowest fat contents, with values of 37.6 g 100 g-1 and 18.3 g 100 g-1, respectively. The lineage MGBR10-16201, which also has a yellow tegument, was identified as free of lipoxygenase isoenzymes. The unsaturated fatty acid levels ranged from 18.48 to 31.37 mg g-1 and from 47.36 to 58.31 mg g-1 for oleic and linoleic acids, respectively. The lineage BRN07-50543, which has a black tegument, presented high total isoflavone levels (546 mg 100 g-1), with an oleic acid level above and linoleic acid level below the standards established by the Codex Alimentarius for soybean oil, with values of 31.37 mg g-1 and 47.36 mg g-1, respectively. The cultivar BRSMG 790A, which has a yellow tegument, presented the lowest isoflavone level (171.4 mg 100 g-1). All the genetic materials examined presented crude protein, fat, dietary fibre and ash levels within the commercial parameters established for soybeans.

Resumo Neste estudo, caracterizaram-se os compostos fenólicos e avaliou-se a atividade antibacteriana de extratos obtidos da farinha da casca de jabuticaba (FCJ). Os compostos fenólicos da FCJ foram extraídos de quatro formas: a) extrato acetônico - 1 g FCJ: 10 mL acetona 70%, duas horas em repouso; b) extrato aquoso - 1 g FCJ: 15 mL água, sob agitação; c) extrato etanólico - 1 g FCJ: 15 mL etanol acidificado, sob agitação; e d) extrato metanólico - 1 g FCJ: 50 mL metanol 50%, sob refluxo. A atividade antibacteriana foi avaliada pela técnica de difusão cavidade em Ágar, utilizando-se os microrganismos Escherichia coli ATCC 11229, Salmonella cholerasuis ATCC 6539, Pseudomonas aeruginosa ATCC 15442, Staphylococcus aureus ATCC 6538 e Listeria monocytogenes ATCC 19117. Os extratos etanólico e metanólico apresentaram os teores mais elevados de compostos fenólicos, sobretudo o cloreto de cianidina, catequina e epicatequina. Os extratos não inibiram o crescimento de Escherichia coli e Salmonella choleraesuis, mas inibiu em 30% o crescimento de Pseudomonas aeruginosa na concentração do extrato de 250 µg mL-1. A maior inibição de crescimento registrada foi de 41,8% pelo extrato etanólico, seguida pela inibição de 36% pelo extrato metanólico, contra as bactérias Staphylococcus aureus e Listeria monocytogenes, revelando assim a potencialidade destes extratos como possível alternativa para utilização na indústria de alimentos e/ou farmacêutica.

Abstract The phenolic compounds from various extracts of jabuticaba skin powder (JSP) were characterized in this study, and the antibacterial activity assessed. The phenolic compounds were extracted from the JSP using four methods: a) acetone extraction - 1 g JSP: 10 mL 70% acetone, resting for 2 hours; b) aqueous extract - 1 g JSP: 15 mL water, under agitation; c) ethanolic extract - 1 g JSP: 15 mL acidified ethanol, under agitation; and d) methanolic extract - 1 g JSP: 50 mL 50% methanol, under reflux. The antibacterial activity was evaluated by the agar diffusion assay, using Escherichia coli ATCC 11229, Salmonella choleraesuis ATCC 6539, Pseudomonas aeruginosa ATCC 15442, Staphylococcus aureus ATCC 6538 and Listeria monocytogenes ATCC 19117. The ethanolic and methanolic extracts showed the highest levels of phenolic compounds, especially of cyanidin chloride, catechin and epicatechin. The extracts did not inhibit the growth of Escherichia coli and Salmonella choleraesuis, but inhibited 30% of the growth of Pseudomonas aeruginosa with an extract concentration of 250 µg mL-1. Against Staphylococcus aureus and Listeria monocytogenes the highest inhibitory effect observed was 41.8% for the ethanolic extract, followed by 36% inhibition by the methanolic extract, thus revealing the potential of these extracts as possible alternatives for use in the food and/or pharmaceutical industries.

Abstract Jabuticaba skin flour (JSF), rich in antioxidants and fibre, was used in order to develop four restructured hams in different combinations with meat: 0% control – without the addition of JSF, with the addition of 0.5% JSF, 1.0% JSF and 1.5% JSF, meeting, therefore, the growing demand for meat products with functional appeal. Physicochemical characterizations and sensory analysis were performed, evaluating the impact of information on possible health benefits and the effect on storage. Restructured hams with JSF had higher contents of phenolic compounds; greater weight loss; a darker shade; texture profile with smaller parameters of stiffness, cohesiveness, adhesiveness, flexibility and chewiness (except the restructured ham with 0.5% JSF). Phenolic compounds, pH values, colour and TBARs did not differ with storage time, but were statistically different among JSF concentrations. Panellists preferred the restructured ham without JSF, however, the analysis of variance for overall aspect did not show a significant difference between the restructured ham “control” and those added with 0.5% and 1.0% JSF, after informing the panellists that they would possibly bring health benefits. It is concluded that it is possible to prepare and store restructured hams with JSF, at concentrations of 0.5% and 1.0% with good acceptance.

Resumo Folhas de mandioca (Manihot esculenta Crantz) são resíduos agroindustriais que apresentam potencial para o consumo humano, sendo fontes de proteínas, vitaminas, minerais e de substâncias antioxidantes, com destaque para os compostos fenólicos. No presente estudo, o objetivo foi identificar e quantificar os compostos fenólicos presentes em diferentes extratos da farinha de folhas de mandioca (FFM), cultivar Pão da China, e avaliar seu potencial antioxidante. A extração dos compostos fenólicos foi realizada utilizando três métodos de extração: a) refluxo com metanol/água (50:50, v/v); b) maceração com etanol/água (50:50, v/v) seguido de refluxo com acetona/água (70:30, v/v); c) maceração com metanol PA. A caracterização e quantificação foi realizada por cromatografia líquida de alta eficiência e a atividade antioxidante, determinada pelos métodos ABTS e β-caroteno/ácido linoleico. Foram encontrados cinco compostos fenólicos nos extratos da FFM: ácido gálico, galocatequina, catequina, ácido clorogênico e epigalocatequina, sendo a extração com metanol/água (50:50, v/v) a que revelou a presença do maior número destes compostos e o maior potencial antioxidante. Entre os fenólicos da FFM, independentemente do extrato, a catequina foi o majoritário. Pode-se inferir que a atividade antioxidante dos extratos da FFM está relacionada com a presença de compostos, pois a extração com maior teor desses compostos foi a que demonstrou maior potencial antioxidante.

Summary Cassava (Manihot esculenta Crantz) leaves are agroindustrial residues with the potential for human consumption, being sources of protein, vitamins, minerals and antioxidant substances, especially phenolic compounds. The objective of the present study was to identify and quantify the phenolic compounds present in different cassava leaf flour (FFM) extracts, from the Pão da China cultivar, and evaluate their antioxidant potential. The phenolic compounds were extracted using the following three methods: a) refluxing with methanol/water (50:50, v/v); b) maceration with ethanol/water (50:50, v/v) followed by refluxing with acetone/water (70:30, v/v); c) maceration with methanol PA. The compounds were identified and quantified by high performance liquid chromatography, and the antioxidant activity determined by the ABTS and β-carotene/linoleic acid methods. Five phenolic compounds were found in the FFM extracts: gallic acid, gallocatechin, catechin, chlorogenic acid and epigallocatechin, extraction with methanol/water (50:50, v/v) revealing the presence of the greatest number of these compounds and the highest antioxidant potential. Of the phenolic compounds found in FFM, catechin was the major one, independent of the extraction method. It can be inferred that the antioxidant activity of the FFM extracts is related to the presence of phenolic compounds, since the sample with the highest content of these compounds demonstrated the highest antioxidant potential.

The aim of this study was to evaluate the therapeutic and toxicologic effects of the administration of the powered vegetable extract and aqueous extract of Tournefortia paniculata leaves on Wistar rats, subjected to a hypercaloric diet for 42 days. The rats were divided into five groups and were given the following treatments by gavage: T0 (control) - 1.0 mL water day-1; T1 - aqueous extract containing 14 mg phenolic compounds kg-1 rat day-1; T2 - 14 mg quercetin kg-1 rat day-1; T3 - 50 mg powered vegetable extract from T. paniculata leaves (PVE) kg-1 rat day-1 and T4 - 100 mg PVE kg-1 rat day-1. The treatments did not significantly alter the weight, but were effective in reducing liver fat, glucose and serum triglycerides. The treatment T1 reduced food consumption and lipid peroxidation. None of the treatments showed genotoxic potential. Results showed that T. paniculata leaves possessed an anti-obesity potential. However, a more detailed study of the medicinal potential and characterization of phytochemicals in this plant would be still necessary for a better understanding of its mechanisms of action, enabling future applications in the treatment of this pathology or for various therapeutic purposes.

Pumpkin (Cucurbita maxima), popularly known as squash, is a widely grown vegetable in Brazil. In this study, pumpkin seed flours (PSF) with different granulometries were used: PSF 1 (medium granulometry) and PSF 2 (coarse granulometry) in the preparation of cereal bars (CB) with different combinations with brown oats. Five formulations were prepared: CB-1 (control - 25% brown oats and 0% PSF); CB-2 (12.5% PSF 1 and 12.5% brown oats); CB-3 (25% PSF 1 and 0% brown oats); CB-4 (12.5% PSF 2 and 12.5% brown oats); and CB-5 (25% PSF 2 and 0% brown oats). The acceptance test results were analyzed in a conventional preference mapping which indicated that the bars CB-2 and CB-5 received mostly the maximum hedonistic score. With the objective of developing a cereal bar replacing oats with PSF, the bars CB-2 and CB-5 were compared to the conventional bar CB-1. The cereal bars CB-2 and CB-5 showed an increase in crude protein (87.5% and 62.5%) and in dietary fiber (77% and 44%), respectively. These results allowed the classification of CB-2 and CB-5 as fiber sources; they can, therefore, be classified as light products according to the Brazilian legislation.

A atemoia é um fruto híbrido derivado do cruzamento entre a fruta-do-conde, mais conhecida como ata (Annona squamosa L.), com a cherimoia (Annona cherimola Mill.). Este trabalho foi realizado com o objetivo de caracterizar os constituintes químicos das frações casca, polpa e semente de atemoia Gefner. Os frutos adquiridos foram selecionados, pesados e medidos. Foram separados em casca, polpa, semente e eixo floral, que também foram pesados para determinar suas proporções. Para o restante dos frutos, foram separadas as frações em sete repetições de 13 frutos. Em seguida, as frações casca, polpa e sementes foram liofilizadas e armazenadas em freezer. Foi determinada a proporção das frações do fruto, a composição centesimal, o ácido ascórbico, os açúcares totais, os minerais e alguns compostos bioativos. A polpa representou cerca de 60% do peso do fruto, enquanto a casca 28,13% e as sementes 8,34%. O fruto apresentou, em média, 56 sementes, com diâmetro longitudinal de 10,79cm e diâmetro transversal de 26,64cm. Os maiores teores de proteína bruta, extrato etéreo e fibra alimentar foram encontrados nas sementes e casca. A casca se destacou nos teores de cinzas. A polpa apresentou os maiores teores de ácido ascórbico e açúcares totais em relação às outras frações. A ordem da composição de macronutrientes na casca, na polpa e nas sementes da atemoia foi K>P>Ca>Mg; para os micronutrientes na casca e nas sementes, foi Fe>Zn>Cu>Mn>S e, na polpa, foi Fe>Zn>Mn>Cu>S. A casca apresentou os níveis mais altos de inibidores de tripsina e atividade hemaglutinante. Os teores de compostos fenólicos foram relativamente baixos no fruto.

The atemoya is a hybrid fruit derived from the cross between the sugar apple (fruta-do-conde), better known as ata (Annona squamosa L.) with the cherimoya (Annona cherimola Mill.). The aim of this research was to characterize the chemical constituents of the fractions skin, pulp and seed of the hybrid fruit atemoya, variety Gefner. The fruits purchased and selected were weighed and measured. They were separated into skin, pulp, seed and floral axis which were also weighted to determine their proportions. For the rest of the fruits, the fractions were separated into 7 replicates of 13 fruits. Then, the fractions skin, pulp and seeds were freeze-dried and stored in freezer. The proportion of the fruit fractions, the centesimal composition, ascorbic acid, total sugars, minerals and some bioactive compounds were determined. The pulp represented about 60% of the fruit weight, while the skin 28.13% and the seeds 8.34%. The fruit presented on the average 56 seeds, with longitudinal diameter of 10.79 cm and transversal diameter of 26.64 cm. The largest contents of crude protein, ether extract and dietary fiber were found in both seeds and skin. The skin stood out in the ash contents. The pulp showed the highest contents of ascorbic acid and total sugars in relation to the other fractions. The order of the composition of macronutrients in the skin, pulp and seeds of the atemoya was K>P>Ca>Mg; for the skin and seed micronutrients were Fe>Zn>Cu>Mn>S and in the pulp were Fe>Zn>Mn>Cu>S. The skin presented the highest levels of trypsin inhibitors and hemagglutinating activity. The phenolic compounds were relatively low in the fruit.

O crescente interesse da população pela promoção da saúde vem despertando a atenção dos consumidores por alimentos ricos em antioxidantes, combinado com a praticidade do consumo de sucos de frutos processados. O presente trabalho objetivou quantificar e avaliar a capacidade antioxidante de compostos fenólicos e ácido ascórbico em frutas in natura e polpas congeladas. As frutas in natura e polpas congeladas obtidas na região de Lavras - MG foram submetidas à quantificação de compostos fenólicos e ácido ascórbico e os respectivos extratos acetônico-etanólico e acetônico-metanólico. Foram determinadas suas atividades antioxidantes pelos métodos radicalares DPPH e ABTS. O extrato acetônico-metanólico foi mais efetivo para extrair os compostos antioxidantes das amostras. Apenas as polpas congeladas de acerola apresentaram uma redução do teor de compostos fenólicos em relação ao fruto. Para o teor de ácido ascórbico, houve uma redução nas polpas congeladas de acerola e goiaba. As amostras de acerola apresentaram os maiores teores de compostos fenólicos, ácido ascórbico e atividade antioxidante em relação aos demais frutos analisados.

The growing public interest in health- promotion, has called the attention of consumers for foods rich in antioxidants, combined with the practicality of the consumption of processed fruit juices. Therefore, this study aimed to quantify and evaluate the antioxidant capacity of phenolic compounds and ascorbic acid in fruits "in natura" and frozen pulps. The fruits "in natura" and frozen pulps from region of Lavras-MG, underwent quantification of phenolic compounds, ascorbic acid and the corresponding extracts acetonic-ethanolic and acetonic-methanolic. Their antioxidant activities were evaluated by DPPH and ABTS radical methods. The extract acetonic-methanolic was more effective to extract the antioxidant compounds from samples. Only frozen acerola pulps showed lower content of phenolic compounds in relation to fruit. For ascorbic acid, there was a reduction in the frozen pulp of acerola and guava. Acerola samples showed higher content of phenolic compounds, ascorbic acid and antioxidant activity compared to other fruits analyzed.

Acerola is a fruit that can be consumed in the form of juice and pulp. However, during its processing, a large amount of waste is generated (seed and bagasse). Adding value to these by-products is of great interest, since their use can enrich foods with nutrients and fiber. In this study, we performed phytochemical screening, determined the proximate and mineral composition, bioactive compounds and the technological functional properties of acerola seed flour and acerola bagasse flour. Seeds were dried in a ventilated oven at ± 45 °C and the bagasse was lyophilized. Samples were ground, stored in flasks protected from light. Phytochemical screening revealed metabolites of nutritional and pharmacological interest and no potentially toxic substances in the flours. Seed flour and bagasse flour showed high levels (g 100 g- 1 of dry matter - DM) of soluble fiber: 4.76 and 8.74; insoluble fiber: 75.76 and 28.58, and phenolic compounds: 4.73 and 10.82, respectively. The flours also showed high absorption of water, oil and emulsion stability, presenting potential for inclusion in meat products and bakery products.

Esforços são empregados para identificar plantas com teores de antioxidantes que conferem benefícios à saúde. A capacidade antioxidante do pêssego deve-se aos compostos fenólicos, vitamina C e carotenoides. O objetivo deste trabalho foi caracterizar quatro cultivares de pessegueiro (Aurora, Biuti, Diamante e Douradão) em relação à capacidade antioxidante, determinando o teor dos compostos antioxidantes relacionados a essa atividade. Os frutos foram separados em dois grupos: sem armazenamento e armazenados por cinco dias à temperatura ambiente. Foram determinados os teores de vitamina C, carotenoides, compostos fenólicos e a capacidade antioxidante, pelos métodos DPPH e β-caroteno/ácido linoleico. As quatro cultivares mostraram-se ricas em substâncias antioxidantes, porém a intensidade dessa ação foi diferenciada entre elas. A cultivar Biuti apresentou maior teor das substâncias analisadas e maior atividade antioxidante em relação às outras cultivares. Foi observado que o potencial antioxidante dos frutos de pêssego aumentou durante o período de armazenamento.

Efforts have been spent in order to identify plants with antioxidant levels that provide health benefits. The antioxidant capacity of peach is due to phenolic compounds, vitamin C and carotenoids. This study aimed to characterize four peach cultivars (Aurora, Biuti, Diamante and Douradão), in relation to the antioxidant capacity, determining the content of antioxidant compounds related to this activity. The fruits were separated into two groups: not stored and stored for five days at room temperature. The contents of vitamin C, carotenoids, phenolic compounds and the antioxidant capacity were determined by DPPH and β-carotene/linoleic acid methods. All the cultivars proved to be rich in antioxidant substances; however, the intensity of this action was different among them. Cultivar Biuti presented highest levels of the analyzed substances and higher antioxidant activity compared to other cultivars. It was possible to observe that the antioxidant potential of peach fruits increased during the storage period.

A goiabeira (Psidium guajava) é uma planta nativa brasileira, e seus frutos são ricos em compostos antioxidantes os quais podem causar a oxidação das lipoproteínas, reduzindo o estresse oxidativo. Objetivou-se com este trabalho determinar essas substâncias e a atividade antioxidante das farinhas dos frutos das cultivares Pedro Sato, Paluma e Século XXI. Foram selecionados 35 frutos de cada cultivar, levando-se em consideração o grau de maturação. Os frutos foram lavados, picados, congelados em nitrogênio líquido e liofilizados. Posteriormente, foram trituradas para a obtenção das farinhas. Os parâmetros analisados foram o teor de compostos fenólicos, vitamina C, betacaroteno, fibras alimentares, minerais (ferro, potássio, cobre, magnésio, manganês, zinco e cálcio) e atividade antioxidante, pelos métodos DPPH e betacaroteno/ácido linoleico. Os teores de compostos fenólicos foram maiores para a cultivar Século XXI. O teor de betacaroteno e fibra alimentar não variaram entre as cultivares analisadas. As cultivares Século XXI e Paluma destacaram- se na atividade antioxidante pelos dois métodos. Em relação aos minerais, não houve diferença significativa para o potássio, cobre e zinco. O mineral cálcio não foi detectado pelo método empregado. Os teores de ferro, magnésio e manganês foram maiores para as cultivares Paluma, Pedro Sato e Século XXI, respectivamente.

Guava (Psidium guajava) is a native Brazilian plant and its fruits are rich in antioxidants compounds which can inhibit the liproteins oxidation, reducing the aggravations of oxidative stress. The objective of this study was to determine these substances and antioxidant activity of the flours from the fruits of Pedro Sato, Paluma and Século XXI cultivars. The parameters analyzed were phenolic compounds, vitamin C, beta-carotene, dietary fiber, minerals (iron, potassium, copper, magnesium, manganese, zinc and calcium) and antioxidant activity by DPPH methods and beta-carotene/acid linoleic. The levels of phenolic compounds were higher for the Século XXI cultivar.The level of beta-carotene and dietary fiber did not vary among cultivars analyzed. The Paluma and Século XXI cultivars stood out in antioxidant activity by both methods. Regarding to minerals, there was no significant difference for potassium, copper and zinc. Calcium was not detected by the used method. Iron, magnesium and manganese were higher for Paluma, Pedro Sato and Século XXI, respectively.

A goiaba apresenta altas taxas de respiração e uma vida útil muito curta, e como as informações sobre o padrão respiratório são contraditórias, objetivou-se estudar mudanças ocorridas no fruto durante o amadurecimento e relacioná-las ao comportamento respiratório desses frutos. Foram colhidas goiabas no estádio "de vez" e armazenadas por 8 dias à temperatura ambiente (22 ± 1 ºC e umidade relativa de 78 ± 1%). As análises realizadas foram: coloração da casca e polpa, firmeza, sólidos solúveis totais (SST), acidez total titulável (ATT) e produção de etileno. Pelos resultados, verificou-se que todas as variáveis analisadas aparentemente não coincidem e independem da síntese de etileno. A produção de etileno durante o amadurecimento teve aumento acentuado a partir do 4º dia. Até o 8º dia, com os frutos já em fase de decomposição, a síntese do etileno continuava aumentando. Observou-se que a firmeza diminuiu acentuadamente nos três primeiros dias de amadurecimento e a cor da casca e da polpa alteraram com o amadurecimento. Os SST e a ATT dos frutos praticamente não variaram durante o amadurecimento, mesmo com o aumento da produção de etileno. Conclui-se que a goiaba é um fruto que apresenta características de frutos climatéricos e também de frutos não climatéricos.

Guava is a fruit with high respiration rates and a very short shelf life. Since information on its respiration pattern is contradictory, the objective was to study the changes occurring in the fruit during ripening and to relate them to the respiration behavior of this fruit. Guavas were picked at the half-ripe stage and stored for 8 days at 22 ± 1 ºC and 78 ± 1% relative humidity. The analyses conducted were: peel and pulp coloration, firmness, total soluble solids (TSS), total titratable acidity (TTA), and ethylene production. According to the results, it was verified that the parameters analyzed apparently do not coincide and are ethylene-independent. There was an accentuated ethylene production during ripening, starting from the 4th day. The ethylene synthesis continued increasing up to the 8th day, when the fruits were already decomposing. It was observed that the firmness decreased sharply in the first three days of ripening, and the skin and pulp color changed during ripening. The TSS, total soluble solids, and the TTA, total titratable acidity, practically did not change during the ripening, even with the increased ethylene production. It can be concluded that guava is a fruit that presents characteristics of climacteric and non-climacteric fruits.

O objetivo deste trabalho foi avaliar a utilização de cactáceas do gênero Pereskia na alimentação humana. A pesquisa foi realizada nos 1.525 domicílios da cidade de São Gonçalo do Abaeté (MG). Nessa cidade, onde foi aplicado o questionário socioeconômico e quanto ao uso alimentar desta planta, comumente chamada de ora-pro-nóbis, somente 25 domicílios possuíam plantas do gênero Pereskia. Em 22 domicílios, havia a presença da Pereskia grandifolia, em três, havia a de Pereskia aculeata e, em um, havia os dois tipos. A presença de nutrientes na ora-pro-nobis foi citada por 83,33% dos entrevistados, sendo que 33,37% citaram um consumo mensal. A planta foi citada por 66,67% dos entrevistados como importante no tratamento da anemia ferropriva, por 16,67%, como agente terapêutico para o câncer, por 12,50%, para prevenção ou tratamento da osteoporose e, por 8,33%, para o tratamento da constipação intestinal. A classificação da ora-pro-nobis na categoria das hortaliças foi citada por 54,17% dos entrevistados. Concluiu-se que o resgate cultural do consumo desse tipo de planta poderá melhorar a condição nutricional e de renda das pessoas menos favorecidas economicamente, tanto no ambiente urbano quanto rural, de diferentes regiões do Brasil.

The objective of this study was to evaluate the use of cacti of the genus Pereskia, for human consumption food. The study was conducted in 1.525 households in the city of São Gonçalo do Abaeté (MG). In this city where the socioeconomic questionnaire was applied regarding the dietary use of this plant, commonly referred to as ora-pro-nobis, only 25 of the households possessed plants of the genus Pereskia. In 22 households there was the presence of Pereskia grandifolia, in three households there was Pereskia aculeata, and one had both types. The presence of nutrients in the ora-pro-nobis was cited by 83.33% of respondents, where 33.37% cited monthly consumption. The plant was cited by 66.67% of the respondents as important in the treatment of iron deficiency anemia, by 16.67% as a therapeutic agent for cancer, by 12.50% for prevention or treatment of osteoporosis and 8.33% for the treatment of constipation. ora-pro-nobis was classified as a vegetable by 54.17% of respondents. It was concluded that the cultural revival of consumption of this type of plant may improve nutritional status and income of lower-class families in both urban and rural regions, from different regions of Brazil.

A goiaba é uma das mais completas e equilibradas frutas no que diz respeito ao valor nutritivo. Altamente perecível, devido ao seu intenso metabolismo durante o amadurecimento, tem vida útil que pode chegar de 3 até 5 dias sob temperatura ambiente. A firmeza dos frutos verdes e maduros é devida principalmente aos polímeros de pectina. A perda de firmeza durante o amadurecimento da goiaba é devido à atividade de enzimas hidrolíticas, que promovem intensa solubilização das pectinas constituintes da parede celular. Diante do exposto, com a finalidade de tentar explicar a rápida diminuição da firmeza, determinou-se a composição centesimal dos frutos da goiaba e fez-se um fracionamento dos açúcares durante o amadurecimento em temperatura ambiente. Foram colhidas goiabas no estádio "de vez" e armazenadas por 8 dias à temperatura de 22 ± 1 ºC e umidade relativa de 78 ± 1%. As análises realizadas foram: composição centesimal, fracionamento dos açúcares e espectrometria de absorção na região do infravermelho. Pelos resultados, verificou-se que os açúcares de goiaba não variaram durante o amadurecimento. Os teores de pectina estimados (5,7%) foram maiores que os teores citados na literatura (2,4%), o que pode explicar melhor o papel da pectina na firmeza do fruto.

Guava is one of the most complete and balanced fruits in in terms of s nutritional value. Highly perishable, due to its intense metabolism during ripening, its shelf life can reach 3 to 5 days under room temperature. The firmness of the green and mature fruits is due mainly to the pectin polymers. The loss of firmness during the guava ripening is due to hydrolytic enzyme activity, which promotes intense solubilization of the cell wall pectins. Given the above, with the purpose of trying to explain the rapid firmness decrease, the centesimal composition and sugar fraction of the guava fruit were determined during ripening at room temperature. The guavas were picked at the half-mature stage and stored for 8 days at 22 ± 1 ºC and 78 ± 1% relative humidity. The analyses conducted were: centesimal composition, sugar fractionation, and infrared absorption spectrometry. The results showed that the guava sugars did not vary during ripening. The estimated pectin levels (5.7%) were higher than those mentioned in the literature (2.4%), which can better explain the role of the pectin in the fruit firmness.

O polvilho da fruta-de-lobo é um produto extraído da polpa da fruta-de-lobo verde (Solanum lycocarpum St. Hil), popularmente utilizado. Pouco se conhece a respeito desse polvilho, apesar de ele ser comercializado em farmácias na região de Lavras-MG, na forma de cápsulas de 300 mg. É utilizado no tratamento da diabetes e a ele são atribuídos outros efeitos terapêuticos, como a redução da obesidade e do colesterol, mas sem conhecimento científico e sem conhecer sua composição centesimal. Com o objetivo de conhecer sua composição centesimal, foram coletadas 80 frutas-de-lobo na área de pastagem do Departamento de Zootecnia, na Universidade Federal de Lavras. Foram selecionadas 61 frutas, levando em consideração o tamanho e o estádio de maturação. As frutas selecionadas foram lavadas, descascadas e picadas, as sementes retiradas, trituradas e o polvilho obtido foi filtrado, decantado, lavado com água destilada por duas vezes e seco em estufa de ventilação. A amostra foi triturada em um gral de porcelana e armazenada em um recipiente de vidro hermeticamente fechado e protegido da luz, sob temperatura ambiente. Foram realizadas as análises de composição centesimal, observando-se que, no polvilho da fruta-de-lobo, os carboidratos são os constituintes predominantes (84,99%), seguidos de fibras solúveis (1,35%), fibras insolúveis (1,60%), proteínas (0,60%), lipídeos (0,07%), cinzas (0,03%) e umidade (11,16%). Os teores de fibras alimentares encontrados no polvilho da fruta-de-lobo podem estar relacionados aos efeitos terapêuticos que são atribuídos a ele.

Fruit-of-wolf flour is a product extracted from the unripe fruit-of-wolf pulp (Solanum lycocarpum St. Hil), according to folk knowledge. Little is known of that starch; in spite of it is being marketed in pharmacies in the region of Lavras, in 300 mg capsules. It is utilized in the treatment of diabetes and it is also ascribed other therapeutic effects such as reduction of obesity and cholesterol, but without any scientific knowledge and without knowing its centesimal composition. With the objective of knowing its centesimal composition, eighty fruits were collected in the pasture area of the Animal Science Department of the UFLA/Lavras-MG. Sixty-one fruits were selected, taking into account the size and maturation stage. The selected fruits were washed, peeled, chopped, the seeds removed and the obtained starch was filtered, decanted, washed with distilled water twice and dried in an air forced oven. The sample was ground in a china mortar and stored in air-tightly sealed glass container and protected from light at room temperature. The centesimal composition analyses were performed and observing that in the fruit-of-wolf flour, carbohydrates are the predominant constituents (84.99%), followed by soluble fibers (1.35%), insoluble fibers (1.60%), proteins (0.60%), lipids (0.07%), ashes (0.03%) and moisture (11.16%). The contents of food fibers found in the fruit-of-wolf flour can be related to the therapeutic effects which are ascribed to it.
